Love Ceviche? Making It Yourself Is Easier Than You Think

When the weather starts heating up, I truly can't be bothered to cook elaborate meals in my sweltering kitchen. Stand over a hot stove top stirring for hours? I think the fuck not. I'm all about simple meals that deliver on flavor and take the pressure off. Enter this incredible ceviche dish. Traditional ceviche is prepared by allowing seafood to "cook" in lime juice for a few hours before it's served.

You can pretty much add whatever you want to your ceviche. I've had it served with grilled corn, sweet potatoes, cucumbers and even diced apples. My favorite way to enjoy it however is with chunks of tomatoes, red onion and cilantro over avocado mash. This recipe is pretty straightforward. You'll need a really fresh, firm, white fish and some produce--all of which can be purchased from your local grocery store. Even though this recipe is made with fish in mind, it would also work if you wanted to use shrimp.

I am going through a salsa macha phase at the moment so I topped my ceviche with a bit of it but if you can't get your hands on a jar easily, hot sauces like Valentina or Tapatio would be great too.
